Congratulation to our head chef Richie Trappe. Richie won the Strawberry Festival ‘Wexford Chef Cook-off Challange’ in the Riverpark Hotel Enniscorthy on Tuesday night June 26th.
The competition is a part of the Enniscorthy Strawberry Festival which takes place this weekend.
Richie’s creations were: St Tola Goats Cheese Salad with toasted Pine nuts,
served beside Micro Herbs with Beetroot and Strawberry Textures.
Red Berry Tea Crème Brulee with Wexford Strawberry Compote
served with Vanilla & Strawberry Madelines Biscuits.
The competition judges were Television Celebrity and Food Critic Paola Tullio
and local chef Phelim Byrne with the overall prize generously
sponsored by Kelly’s Hotel Resort, Rosslare.
